Rich Spielman and his son, Raf, started Spielman Bagels in 2011 with the goal to bring the environmental benefits of shade grown coffee to a wider audience through in-house roasting. The coffee did well, but their unique "Portland-style" bagels really stole the show. (Sourdough starter mixed with milk and honey and kettle-boiled to perfection.) For these crispy bagel chips, they partnered with their neighbors Jacobsen Salt Co. (another Mouth maker!) to create the crispiest, most addicting snack we've come across in a long time The base for these crispy bagel chips is their world-famous bagels finished with flaky salt, rosemary and thyme. Yes, please!

Hot tip: once all the bagel chips are gone, pour the remaining herbs and spices onto scrambled eggs, or lox. And for a high/low cocktail hour appetizer, add a dollop of sour cream to the bagel chip, a slice of smoked salmon and a tiny bit of dill!
