And believe us, it’s not because ol’ Peter is pulling a fast one. Each slice is truly a slab, weighing in at over 2 ounces and nearly a half-inch thick. (Most grocery store varieties are a measly 1\/5 inch.) You’ll only need one to satisfy any craving for porky sumptuousness.\u003c\/p\u003e\u003cp\u003eOriginally, the 130 year-old legendary Brooklyn steakhouse reserved this cut of bacon for their waitstaff alone. But we can’t imagine that anything that tasted this good could possibly be kept a secret for long. By the 1980s, it was an elusive part of a secret menu that only the in-the-know diners would request. Finally, in 1997, the restaurant relented and put it on the menu, not as a burger accompaniment or a salad topping, but as a \u003cem\u003estand alone\u003c\/em\u003e a la carte menu item. When we got a taste of this bacon in our tasting room, we felt blessed. (Not even #blessed, just pure hand-to-heaven blessed.) Praise be.
